Margherita
Tomato, Mozzarella, Parmesan, Basil
flavour
Score: 4.5 / 5
The Mozzarella is of a good quality. The dried herbs have been applied at the perfect ratio, never overpowering the flavour.
appearance
Score: 4.5 / 5
The classic looked as it should, simple clean and iconic. A touch more basil would make it even more enticing.
texture
Score: 4.5 / 5
Stringy Mozzarella mixed with dough. The cheese didn’t reach the crust, so the velvety tomato texture offered variation of texture.
on the nose
Score: 4.5 / 5
Smells really enticing. The herbs cut through. It’s exactly how I imagine pizza smells in my dreams.
tasting notes/description
"Today I tasted the classic Pizza Margherita, the iconic champion where many argue the roots of pizza begin. The colours of the Italian flag come over in form of mozzarella, basil and tomato and it looks clean, simple and of course delicious.
Although Margherita may seem like an easy pizza to produce in terms of its simplicity, it’s difficult to execute brilliantly. The taste is as good as the appearance, the Bath Pizza Co use high quality mozzarella in generous quantity. The dried herbs have been applied in perfect proportions, never tasting overkill or dampening the subtle flavours of the pizza.
There is a small edge of pizza that has been left clear of cheese, which gave a variety to texture and taste before the crust. The tomato base feels velvety in the mouth but could have been a dash sweeter. A few extra leaves of basil would have been a positive addition.
Due to the characteristics some pizzas in this world, they are usually quite difficult to handle, with never ending strings of cheese and sloppy greasy dough. The the talent here have managed to keep it together with their expertise and bags of passion. The dough recipe is easily the best in town and is topped with only the highest quality produce .
Overall, an authentic pizza that has been extremely well executed. Tastes and smells like how I imagine pizza in my dreams!"
